Pearl millet (Cenchrus americanus, commonly known as the synonym Pennisetum glaucum; also known as ‘Bajra’) is the most widely grown type of millet. It has been grown in Africa and the Indian subcontinent since prehistoric times. India is the largest producer of Pearl millet. Millets are gluten-free, highly nutritious and rich in dietary fiber. They are rich in micronutrients, including calcium, iron, phosphours, etc. They are low in Glycemic Index (GI) as such don’t cause huge spike in blood sugar. Millets should ideally be an integral part of our daily diet.

Usages of Millet Grain:

Millets are a great source of starch, making it a high-energy food. It is also an excellent source of protein and fiber. It is said that the amino acids in the pearl millet are more easily digestible than the ones found in wheat. To add a crunchy texture and to bring variety to the baked foods, dry millet flour is added to biscuits and breads. Traditionally, it is used as porridge or in the gruel form. Bakery products like cakes, muffins, cookies and biscuits are enhanced with Pearl millet flour. Sprouted pearl millet can be used in salads and sandwiches.
